Pan fried Salmon with Samphire and Capers

Now this may seem a touch extravagant for a student, but all in all this dish was about £3, mainly due to some decent offers from Tesco (other supermarkets are available).

I fried off onions, celery and leeks in some oil, with a bay leaf and plenty of seasoning.

I would have added some white wine, but perhaps surprisingly for a student flat, not I or any of my flatmates had any.

In went a good helping of butter and lemon.
I boiled the samphire for a few minutes and added this to the other veg. Taste, season and bob’s your uncle.

Pan fry the salmon – dry the salmon off and add to a hot pan. Do not touch the Salmon, but let the heat penetrate upwards. You may need to sear of the sides after a while, just to make sure it is cooked in the middle.

Some capers on top and it’s as easy as that.

Cheap, healthy, tasty.
